PUB CONCEPT LEVELS

The Celtic Dragon Pub Company has created 3 distinct, design packages to fit the operator's budget and to select the concept that will best fit into the marketplace. If the owner or operator is unsure of the concept best suited for the marketplace, the Celtic Dragon Pub Company will do a Concept Feasibility Study to determine the best Celtic Dragon pub concept for the location.

The design/concept packages are directly related to the menu and targeted price ranges for the average guest check as well as the square footage of the operation. T'he costs of the design and decor is also directly related to the type of concept selected as well as square footage of the operation. A name and logo is developed for each location.

DESIGN 1 - VILLAGE & TOWN PUB
This concept is the entry level of the Celtic Dragon Pub Company's concepts and is designed to a market niche where the average guest check will be between $7 and $15 per person for food. The menu offerings are somewhat light and consists of appetizers, salads and sandwiches. Beverage offerings include Irish draft beers and a selection of Irish whiskies and liqueurs, if the owners have the appropriate licenses.

The design elements feature painted stucco exterior and interior walls, a stucco fireplace and both seating and decor that is casual. Most furniture will be of random styles, including used and refinished pieces. In renovations of existing operations, the design team will make every effort to use existing fumishings if possible, attempting to keep the budget significantly lower for the owner. A separate area will be provided for darts and a gift shop.

The decor package will consist of inexpensive prints and various advertising pieces of Irish products. An overall decor theme of an " Irish country look" will be the theme. Celtic Dragon's national and international prominence makes it possible to request quality advertising decor pieces from a variety of Irish companies at no charge or minimal charge to the owner. In all cases, we will always strive to maximize our ability to get the most for our client with the budget always in mind.

DESIGN 2 - CITY PUB
This design incorporates the elements of many popular pubs and restaurants of cities such as Dublin, Cork, Galway and Belfast. More upscale than the Village pub, the City pub concept incorporates a detailed painted wood facade, a flagstone fireplace, a combination of wood, slate and carpeted flooring, a combination of painted acoustical ceiling tiles and metal ceiling tiles. The design also includes interior walls with beadboard wainscoting stained a dark, rich mahogany color. The furniture will consist of booths separated by Irish lace with glass topped tables with Irish lace over green table cloths under the glass and an eclectic mixture of style of tables and chairs. Separate areas will be provided for darts, entertainment and a gift shop, Photographs, prints and artifacts depicting Irish life throughout history will adorn the walls and many shelves in the design. Throughout the design antiques are incorporated to add to the authenticity and to enhance the guest's perception of quality and timelessness.

The menu of the City Pub concept will feature a wide variety of appetizers, salads, sandwiches, entrees, desserts and specialty house drinks in a price range from $15 to $25, in an all day menu format. A full line of Irish beers, Irish whiskies and Irish liqueurs will be prominently displayed on the back bar and on table tents.

DESIGN 3 - CASTLE RESTAURANT & PUB
Throughout Ireland, visitors can enjoy some of the most ornate surroundings and exquisite culinary delights in the castles and manor houses of Ireland, many of which have been featured in BON APPETIT magazine. This concept has been designed to appeal to operators and guests who appreciate fine continental dining experiences.

The design elements are very upscale and features a separate parlour for enjoying after dinner drinks and desserts, (desserts are not served in the main dining area). The parlour will include one of several of the stone fireplaces, surrounded by an antique wood and marble hearth and mantle, bookshelves with Irish antiques and the works of the great Irish writers on both sides of the fireplace will be major design elements. The guests will be serviced by appropriately attired butlers and chambermaid in the parlour, attending to the guests every need from a footstool for the madame to the finest cognacs for the gentlemen. All guests will feel like Lords and Ladies as they experience superior food and beverage offerings, elegant surroundings and impeccable continental service, enhanced by a harpist or pianist playing Celtic music.

The decor will feature authentic Irish gallery art including, oils, etchings, tapestries and sculptures. The dining room furnishings will be period furniture and a combination of reproductions and original antique pieces from Ireland and Great Britain. The gift shop will offer Waterford crystal, Belleek Parian China, and fine silk and woolen garments imported from Ireland.

The menu offerings will include, fresh and smoked Irish salmon, rack of lamb and beef tenderloin with spring vegetables and other culinary delights made from the exact recipes of Ireland's most famous gourmands.
